Pollo con fagiolini verdi/Chicken with green beans

Chicken with green beans makes for a fantastic, flavorful main course. First, trim and wash the green beans, then place them in a pot to boil in water with a pinch of salt. Meanwhile, in a skillet with a drizzle of oil, sauté 2 chopped onions over low heat until they’re cooked through without browning. When the onions are slightly tender, add the chicken thighs and cook them, turning them occasionally, and add a little broth to keep them moist. After about 40 minutes, add the cooked and drained green beans, stir, and cook for another 10 minutes. Add a little salt, pepper, a glass of wine, and 1 tablespoon of triple-concentrated tomato paste. Let it cook until the wine has almost completely evaporated. Serve hot with some bread to mop up the sauce at the end.
