Riso con speck e funghi/Rice with speck and mushrooms

A delicious risotto, simple and quick to prepare. First, put some water (or broth) on to boil for the rice. In a wok, sauté a large onion and a clove of garlic, both finely chopped, in a little oil. Slice the mushrooms and add them to the sautéed onion and garlic, season with salt and pepper and cook over medium heat with the lid on. Cook the rice. When the mushrooms are cooked, add the speck and stir, cook for a few minutes and then add the cooked rice with a little of the cooking water and cook for another 2 minutes. Serve with a good white wine.
