Pasta Paccheri con cannolicchi/Pasta Paccheri with razor clams

Paccheri pasta with razor clams is a fantastic and flavorful first course. I can’t say this time that it’s easy to make because there are several steps involved, though none of them are complicated. First, soak the razor clams in salted water for at least 8 hours beforehand, then rinse them under running water and cook them for a few minutes in a pan with a drizzle of oil, garlic, and parsley (the same cooking time as for clams or mussels, until they open). Let them cool, then cut them into small pieces. Meanwhile, cook the paccheri. In a wok, sauté garlic and parsley, then add the chopped razor clams with a little salt, pepper, and wine, and cook for a few minutes. Meanwhile, toast 1 or 2 slices of bread in a toaster. Rub a clove of garlic on both sides of the toasted bread, then crumble it until it resembles breadcrumbs. When the paccheri is cooked, drain it and add it to the wok, stir, then add the breadcrumbs, mix well, and serve hot.
