Tris di peperoni con formaggio/Three peppers with cheese

I chose to make this tasty and inviting dish with its explosion of colors and flavors. I put a drizzle of extra virgin olive oil in a pan and then added a red pepper, a yellow pepper, and a green pepper, all washed, cleaned, and cut into strips. I cooked them with the lid on for about 20 minutes, stirring occasionally and adding a dash of wine (you can add broth as an alternative). Once the peppers were cooked, I seasoned them with salt and pepper, stirred them, and then added some slices of Emmental cheese cut into strips. I placed them on top of the cooked peppers and cooked them with the lid on for another 2 minutes until the cheese melted. Turn off the heat and let it cool a little, then serve… A explosion of color and flavor 🙂
