Gramigna di spinaci e salsiccia/Spinach and sausage pasta

Gramigna of spinach are green because spinach has been added to the dough. First, remove the skin from the sausage and then crumble it. In a pan with a drizzle of extra virgin olive oil, sauté a chopped onion, then add the crumbled sausage. When the sausage is cooked, add the tomato sauce, salt, and pepper and cook for another 5 minutes. In the meantime, cook the spinach gramigna. When the gramigna is cooked, drain it and put it back in the pot, then add the sauce with the sausage, stir and serve. Add a sprinkling of Parmesan cheese on top.
