Cavatelli con basilico rosso/Cavatelli with red basil

Cavatelli are made with fresh durum wheat semolina pasta, which can be made at home or bought ready-made. Let’s talk about red basil…it’s fantastic. Personally, I find it much more intense in smell and flavor than green basil. In short, this combination of cavatelli and red basil inspired me to make this simple and delicious recipe. Since it takes just a few minutes to prepare, I first put the water on to boil for the pasta, then I washed and chopped an onion and roughly chopped the basil leaves. I sautéed the onion in a pan for a while, then added the basil leaves. I cooked everything together for a few minutes, then added a little tomato sauce. I added salt and pepper and cooked everything together for a few minutes. Finally, I added a little butter. In almost all my recipes that include tomato sauce, I add a knob of butter… for me, it makes it taste even better. Once the cavatelli are cooked (it usually takes about 7 minutes), drain them and then mix them with our red basil sauce. An explosion of flavor and aroma. Of course, as the finishing touch to an Italian pasta dish… add some Parmigiano Reggiano!
